Ah crap you missed the end credit scene where Will comes back and sees his child for the first time. Also I hate when movies do this "end credit scene" crap. Also all the pirate movies are fun watches, as you can see these movies are not meant to be taken way too seriously and the next movie is quite fun. Yes its about getting to the fountain of Youth

You're right that the Keeper of the Law looks like Captain Jack. He's played by the legendary Keith Richards, guitarist for the Rolling Stones, and Johnny Depp based Jack Sparrow on him.
