ต้นไม้สีเหลือง this one would mean "the yellow tree". You can continue talking about the tree. For example, the yellow tree over there is well know around this area. but ต้นไม้เป็นสีเหลือง means "the tree is yellow"

Why is it ต้นไม้เป็นสีเหลือง not ต้นไม้สีเหลือง? I thought adjectives didn't use verb เป็น.
