Removing the spin from the ball changes the way that air flows over the seams, causing the ball to wobble erratically in its flight. Knuckleball pitchers are pretty rare and they usually throw that one pitch to the exclusion of everything else. It's also a really easy pitch to mess up as, if you throw it poorly, it's basically a really slow lob.
