Hey everyone, here's the transcript with links to the studies and data I mentioned for the most recent video.

2) Yea I see what you mean. Honestly I regret putting in the Djokovic as it made it look more that I was relying on anecdote to make my conclusions. Maybe the Zonulin explanation wasn't thorough enough and I could have talked about Lipopolysaccharide as a potential method for determining the "leakiness" of the gut. Perhaps another video covering it in detail (similar to my fructose biochem video) would be warranted. There's a lot more to the gluten science that I shied away from I'm always trying to strike a balance between "entertaining and engaging" and "informative and useful" - Unfortunately I don't always get it just right.

Hey Stephen, 1) Good question. The reason for this is probably that (as far as I know), there's no particular biomarker for Gluten sensitivity. Since there's no test that checks for a certain compound in the blood or tissue that doctors can hold up and say "Your XYZ level is over 50, this means you have gluten sensitivity..." Then, there's antibody tests and tissue biopsy tests that you can perform to check if someone has celiac disease, but those can come back clean with the person still having bad reactions to gluten. Leaky gut seems to have the same problem as well with no particular biomarker or accurate testing method for it. I suspect that serum Lipopolysaccharide (also known as "endotoxin") would be a good candidate as that would show that gram negative bacteria are 'leaking' out of the stomach into the bloodstream. This study says "serum endotoxin and AGP, as well as, gene expression of FABP2, FABP6, IL-8, IL-1β, TGF-β4, occludin, and MUC2 in mucosa may work as potential biomarkers for gut barrier health in chickens" If I was able, I would bold and italicize "in chickens" [ https://www.ncbi.nlm.nih.gov/pmc/articles/PMC4672187/ ]
