Dianna's food list / Health Update / 1 min

Hey everyone, here is a 1 minute update on the list of foods Dianna can currently have.

Dianna has had a very rough couple months, though as of last week we saw some progress. A more detailed health update will be posted later in the week describing Dianna's condition. In short, she has an extensive variety of allergies and her (PEM), post-exertional malaise, is still being triggered by essentially everything that enters her system. She is not currently in a crash, which is an improvement from April and early May.

Can Dianne take vanilla. I know she likes chocolate. If you could use real vanilla pods or seeds to infuse flavour into the milk? It might help with the taste and make it more palatable. I know you have to introduce substances gradually so she doesn’t get too excited and crash. Sending Love ❤️

Just watching the video makes me cry for you. It also made me think about the pressure sore risk from inactivity. I am sure you have this handled but roho cushions (even several in the bed) are the best at preventing or aiding in the healing of pressure sores are (in my experience) the best short of an air-fluidized bed like a Clinitron. I'm a paraplegic for 45 years and have had those experiences and more.

Daughter has Lupus and diet is very challenging for her. Super athletic pre-med molecular biology/chem student hoping to become a surgeon when it struck. Sounds a lot like autoimmune issues which are so difficult to diagnose. Daughter says in hierarchy of doctors, rheumatologist are at the top of the heap. Hopefully AI, humane genome and quantum computing can provide some answers. Lots of fruit smoothies and other soft concoctions. Instant Pot is great time savor that gets that savory component quickly. Favorite butter chicken from Twosleevers.com Lots of good healthy Indian foods for those recovering from the terrible American diet!

Poor Dianna. I really hope she can stay strong and pull through. What a tough situation. I miss hearing her smart and wonderful explanations on physics. Such an extraordinary human. I didn't realize that she visited my hometown in SD for Neutrino Days. I had moved away to another state but I'm thankful such amazing people will come to visit my sleepy mining town and contribute to the education and outreach that Sanford Lab does for the area. Great idea! I make fast bone broth in the Instant Pot: chicken drumsticks, or bones and scraps. On high pressure one hour. Left overnight (it's sterile.) Then another hour in the morning. The bones turn nearly to mush and are even edible! I give this to my dogs, but it can be strained for broth too. It's cheaper on the power usage too.

If her long covid experience is like mine, I would have waves of symptom severity where they would be intense for a week or three and then lighten up for a week, and then intensify again - but every wave was slightly less intense than the last. Beautiful healing meals. There is no better chef than the person who loves you! On a personal note from Kim here — I sometimes have to go on a liquid diet for my autoimmune condition, and one thing that really wears me down is that all the meal replacements out there are sweet. Sweet pudding, sweet drinks, sweet gels, etc. To make one savoury thing, I usually make up some big batches of bone broth in a slow cooker overnight and try to have at least a cup of that each day. For chicken I'll often use the remains of a Costco chicken (bones and scraps), and peelings and leftovers of carrots, celery, and onion (any veggie scraps are great, but simple is probably better here). I add a splash of apple cider vinegar to encourage more collagen to dissolve into the broth but you don't have to use it. Slowcooker overnight on high, then strain through a colander. I keep it in the fridge if I'm going to use it that week or it freezes beautifully. Add a pinch of salt when you eat it to keep up those electrolytes.

I've seen worse diets; I suspect a little short of total calories (but since she is bed-ridden that may be OK), it may be short of proteins too. If she can tolerate it, try adding a little protein powder or canned chicken, or something to your "smoothie".

As a disabled individual with various complicated medical issues (which sadly includes severe/debilitating chronic pain), it's EXTREMELY important for me to at least get a minimum level of nutrients into my body every day. To that end, I keep some things around for emergency use, like Boost or Ensure shakes in the fridge for those days when I'm unable to make enough food for myself. It can literally be a lifesaver! It allows me to at least get the minimum amount of nutrients along with things like protein into my body so that it doesn't start to literally consume itself. 😕 Have you tried anything like that? I get the sense that you're only using "vegan-type" foods. While that ideal is certainly commendable, it can really be a challenge when getting the extremely basic nutrients a body needs to live each day is paramount. Have you guys tried some sort of nutrient/protein shakes like that, either pre-mixed or in powder form? At any rate, best of luck to you all during this challenging time! I have struggled with digestive issues for decades and have run into some problems that have been made considerably worse because I wasn't getting something my body needed... vitamin C in particular, and it is not something doctors in this country are trained to watch for in adults.

I find Chia Pudding much more palatable when the seeds are just whisked into liquid (not blended) and allowed to sit until set. It's sort of like tapioca, which I love. (Blending makes a horrible goo) Is coconut sugar tolerated? Good luck! Actually, chia stirred into plain water is very refreshing.

You probably already know that medium chain fatty acids like those in cocoanut oil will soak in through the skin. This means you rub it on or drink it in hot water and it doesn't require normal digestion. I wasn't sure if my older Mom and stepdad would be in a similar situation (from different causes) to yours, Dianna, so when I heard this and was moving back nearby, I kept it in mind. I'm glad to see some progress. Roasted butternut squash is awesome. Have you tried delicata squash? Even the peel is edible. I cut it into 3 rings and pan-roast it in water for about 20 minutes. Delicious and easy.
