She's so popular that the second place comes very far in popularity, so in my opinion, she's the safest bet if you don't know anything about HSR. If you ask me, from Genshin I think the most popular bet is Furina, however my favorite would be Shenhe (she's has the biggest breast out of all playable characters) and from HSR would be Kafka.

These 2 characters grabs attention at any time of the year, and are likely the most drawn character from artists that doesn't play genshin impact. However, now the most talked character for this moment, and will be for likely the rest of the year is one called "Furina", who is the Hydro archon, since she's the center of the main new story, and next month she will become a playable character, so everyone is talking about her. Probably you have seen her, she's flat, white hair, wearing all blue. In personality, she has exactly the same personality of Aqua from Konosuba series, and bratty.
