I've got one for you! 1 cup duck fat or neutral oil 1 cup flour One whole green pepper, diced One whole white onion, diced 2 stalks celery, diced 4 cloves garlic, minced 1.5 lb chicken thighs cut into 1” pieces 1 lb andouille sausage (or any spicy sausage) cut into coins 6-8 cups chicken stock 2 bayleafs Cajun spice powder to taste (or use black pepper, red pepper, and chili powder or cayenne. You want to feel the burn) Salt to taste 1) Prepare celery, onion, green pepper first. This is your holy Trinity. Set aside. Also prepare garlic. 2) In large pot combine fat or oil with flour and make a roux. Cook until color of melted chocolate, stirring constantly to prevent it from burning. 3) After roux turns brown immediately add Trinity and stir until onions start to turn translucent. Add garlic and cook another minute until fragrant. Add chicken stock slowly until 2" from top of pot. Add in bayleafs. 4) In a frying pan fry up your sausage and add to the gumbo pot when cooked. Fry up the chicken in the sausage grease until browned. Add to gumbo pot. 5) Cover gumbo with lid and let cook for an hour. Add salt and spice to taste. Ladle over white rice and enjoy*! *At this point I’d add filé powder to thicken gumbo, but that’s probably not something you can find. You can add 1/2 lb of okra after your first hour and cook for 20 minutes to thicken depending on if you enjoy okra or not. Otherwise it should be thick enough from the roux anyways.
