The reason Karasuno is scoring when the other team "blocks" Tanaka's shots is because the ball is bouncing off their block and landing out of bounds, so it counts as the other team hitting it out. The show will cover it more later but purposefully hitting the ball into a block in a way that it bounces off the opponent and goes out is a pretty common strategy.
