The stag you saw when Harry conjured the patronus is a nod to something called a corporeal patronus. Basically when students are learning the patronus spell, which is really advanced magic by the way, their shield is more of this undefined misty thing you see in the movie. But if someone really mastered the patronus, it takes the form of an animal, that represents your personality and fights the dementors for you.
