I kinda figured that the heroes can change from series to series. Which is cool. Creepy dude (episode 2 recorded) is Caster. Completely different character from UBW.

If you want some explanations or refresh I can still help, but honestly for a 3 years break, you did amazingly remembering some of the characters ahaha. The servant aren’t always the same, it depends on the catalyst. Fate/Zero was writed something like 5-6 years after the original Fate, so your watching order is fine. (It’s like Star Wars or Planet of the Apes) Can’t wait for the next episode!
