Heck they were a man when they originally found Luffy and Bon-Chan passed out in the snow. Meaning they went from man to woman to back to man again in the span of a few hours.

Yeah, you could do that every once and a while, but doing it too often would cause body to become too tired to change and cause backlash. Remember people, while it is true thing to chase this, our bodies however are not used to constant change. Respect body enough and not change your body too often. Only heavy magic system might help with this, but Horm-Horm-fruit might only work few times back and worth before body starts to feel strained from change.
