I know it's been a while since you watched/posted this so I know it's unlikely you will check for comments, but redheadedness is tied to a recessive gene, and I believe is more common in families with dark hair. We'll call R black haired gene, and r red haired gene. They tend to pair, and since Grandma is redheaded here genes would be rr. Castle's dad could either have RR black hair or Rr black hair but mixed with Grandma's genes so Castle is Rr black haired. Since r is recessive, the more dominant trait R defines Castle's hair color as black. Castle marries and has a child with Alexis' mom who is rr red haired, producing Alexis who is rr redhaired.
