because you watched the pilot episode so long ago, u missed/forgot quite e bit of exposition and therefore have been struggling a bit during the season. Serena mentioned in the first episode that they were living in a hotel, because Lily was remodeling. Also the whole Roman thing was (if short) mentioned in the pilot, as well the situation with Serena's and Eric's Dad and Lily's many husbands.

It's to show off their wealth and distance from domestic living. Nate and his parents own a luxury town home/estate in New York.
