1st, it is annoying when people in general (this is not just directed at Steven, almost everyone does the same thing) take what a character says at face value, even if they are an expert or believe whole heartedly what they are saying, that does not make it an absolute fact. They had no experience how the cure worked and were only guessing. That being said, when they "experimented" on Katherine, a 500 year old vampire, they learned that once the cure was inside someone it could be removed without draining that person of all their blood, but 1 it would still only be removed as a single dose, and 2 (most importantly) as long as the cure remained in that person the magic would allow them to age normally and live a full human life, but if it is removed from that person, they age rapidly to catch up with their actual human age. So, if they all took it now, only Elena and Caroline would be okay since they are still very young, but Damon & Stefen, any of the Originals (and any other ancient vampire) would all rapidly age and die once the cure was removed from their bodies to be given to the next vampire.

Remember what happened to Katherine in season 5, she had taken the cure, but had it ripped out of her and she aged 500 years and died. The cure only preserves your now mortal body at it's current appearance if you have it in your blood. So Elena takes the cure and is mortal. All Damon now has to do is drink her blood, so then Damon has the cure in his blood and he is now mortal. Elena's body ages, but since it's only been a couple of years that she's been a vampire, her body can handle that instant aging. Now we have two mortals with the cure safely in Damon's bloodstream. If any vampire drains Damon's blood, they now possess the cure, and Damon ages 150+ years and he dies, forever. The ideal path is Damon would have drunk her blood right then, and they live happily ever after till they die of normal old age.
