Though fun, as you say, this is a somewhat problematic episode: 1. You didn't miss anything, the food truck stuff really did come out of nowhere. My best guess is that it was set up in a quick couple of lines in the previous episode that had to get cut for some reason (like time). But this has confused fans since the episode aired. 2. Holt's "tell" is ridiculous. He uses contractions all the time -- listen to him in any episode. Anybody has to use contractions in spoken English, in order to sound idiomatic. Yes, he's formal most of the time, and there were jokes about him being robotic early on, but he's never been as bad as all that in terms of sounding like a human being. I do like the story lines, but not those details.
