They use the maker hooks to open the front of scales and the worms roll-up to keep the sensitive inside out of the sand and on the surface. Riders steer by opening left or right until the worm is exhausted and it's safer to get off.

The Bene Gesserit had been breeding bloodlines for generations seeking the Kwisatch Haderach (a male version of a reverend mother). Jessica choosing to give Leto a son made Paul's potential appear a generation earlier than planned. A reverend mother literally has access to the lives of all her female ancestors (which happened to the baby even before she was born). The Kwisach Haderach would have access to all ancestors male and female.
